Traditional Boerewors
Try it - it's delicious! 
2 kg beef
1 kg pork
20g whole coriander (50ml)
2 ml ground cloves
2 ml grated nutmeg
30 g fine salt (25 ml)
5 ml freshly ground black pepper
500 g speck
100 ml vinegar approximately
90g casings
Method
First prepare the coriander by scorching, grinding and sifting it.
Cut the meat into 50mm cubes and combine with the spices and seasoning.
Mince the meat and dice the speck. Add speck and vinegar to the minced meat and mix lightly but thoroughly.
Loosely stuff mixture into the casings.
Makes about 3.5 kg

Karoo Boerewors
500 g beef 
500 g pork
1 kg mutton
1 ml ground coriander
1 ml ground cloves
14 g fine salt (15 ml)
2 ml freshly ground black pepper
250 g speck
15 ml sweet red wine
25 ml wine vinegar
15 ml brandy
60 g casings
Method
Cut the meat into 50-mm cubes, sprinkle with the spices and seasonings and mince.
Dice the speck into 3-mm cubes and sprinkle over meat.
Combine red wine, vinegar and brandy and sprinkle over meat mixture.
Mix lightly, then stuff loosely into casings. Makes about 2.5 kg.

Tasty Rice & Boerewors
Ingredients
30 ml (2 Tblsp) Oil
1 Onion, chopped
500 grams Boerewors, cut into 4 cm lengths
4 Tomatoes, skinned and chopped
5 ml (1 tsp) Mixed herbs or dried Basil
5 ml (1 tsp) Salt
3 ml (½ tsp) Black Pepper
5 ml (1 tsp) Sugar
250 ml (1 cup) Uncooked Rice (Tastic for the South Africans)
750 ml (3 cups) Beef Stock
Method
Heat the oil and fry onion until soft, but not brown.
Add the Boerewors and fry until lightly browned.
Stir in the tomatoes, mixed herbs or basil, salt, pepper, sugar and uncooked Tastic rice and fry, stirring constantly for a few minutes.
Pour in beef stock and bring to boil. Reduce heat, cover and simmer for 30 - 40 minutes or until meat is tender and rice cooked.
Method
Use any sausage in place of the Boerewors. For a spicy sauce, add 1 chopped chilli or chilli powder to the ingredients.
Replace the tomatoes with a 410 gram can chopped tomatoes.

Bobotie
Bobotie is a traditional Cape Malay dish from South African which resembles 'meatloaf come shepherds pie' with a sweet curry flavour. This recipe is a fairly weak recipe as it only calls for 2 tablespoons of curry but if you like curry and want to make it stronger, feel free to add more. Usually this recipe is best served with curried rice and a good mango chutney.
2 ounces butter
1 cup onions, thinly sliced
1 apple, peeled, diced
2 pounds chopped cooked beef
2 bread slices soaked in milk
2 tablespoons curry powder
1/2 cup raisins
2 tablespoons slivered almonds
2 tablespoons lemon juice
1 egg
1/2 teaspoon turmeric
6 bay leaves
1 egg
1/2 cup whole milk
Melt the butter in a saucepan. Add the onions and sauté for 5 minutes, then add the apple dice and cook for another minute. Add the chopped beef and combine.
Squeeze out the excess milk from the bread slices, then tear up and add to pot. Add the curry powder, raisins, almonds, lemon juice, egg, and turmeric, and stir well.
Place mixture in a greased 9 x 13" baking dish. Place bay leaves vertically in the casserole. Bake at 325 degrees F for 40 minutes, then remove from the oven.
Mix together the egg and milk, then pour it over the Bobotie. Bake for 15 more minutes. Remove bay leaves before serving.
